Dough makeup functions at Boichik Bagels in Berkeley, CA, are highly automated. The production line includes a customized LP mixer and bowl lift, a two-lane BakTek bagel forming system, and an Apex Motion Control BakerBot. The automation reduces several labor-intensive tasks, minimizes workplace injuries, and allows employees to focus on other jobs. The full system is housed behind a floor-to-ceiling glass wall that lets customers watch the production process in action. Emily Winston, founder and CEO of Boichik Bagels, designed the system herself. For an added bit of fun, she had Apex program the end-of-arm tooling so it waves to the audience.
