Matisse front and center in Laduree’s latest drop

NEW YORK — Renowned pastry house Laduree is continuing its series of artistic collaborations with its latest partnership.

The bakery teamed up with Maison Matisse to unveil new treats and brand packaging, decorated with vibrant hues reminiscent of the summer season. Drawing inspiration from Matisse’s La Perruche et la Sirène, the design dives into the intensity of color and energy of its contrasts.

The 12-count macaron box features the artist’s signature cutouts in blue, red and pink hues and a handwritten quote from the artist taken from his 1947 jazz album: “There are flowers everywhere for those who want to see them.”

Inspired by southern flavors

“In his writings and works, Matisse expressed his love for vanilla and his fondness for citrus fruit,” said Julien Alvarez, executive pastry chef for Laduree. “I was inspired to create a dessert reminiscent of crepe Suzette, featuring a generous vanilla cream enhanced by orange. It’s an indulgent and nostalgic pastry.”

The Vanilla & Citrus Macaron is filled with notes of orange, vanilla, mandarin, clementine and yuzu. The Matisse Vanilla & Citrus Entremets feature a shortbread biscuit, a soft biscuit, caramel and orange-clementine marmalade with vanilla cream. The Entremets are topped with edible decorations akin to Matisse’s artistry.

“Visually, I wanted the dessert to immediately evoke the artist’s work, so I integrated Matisse’s signature motifs into my creations,” Julien said.

The macarons are available from May 28 to Sept. 2 at all Laduree locations. The Entremets are available for the same dates but exclusively at the bakery brand’s Soho and Madison storefronts.
