NEW YORK — Spring is here, and Levain Bakery is celebrating the turn of the season with a limited-time sweet: Carrot Cake Cookie.
Inspired by the classic dessert and rooted in the bakery’s tradition of indulgent 6-ounce cookies, the new baked good is packed with grated carrots, apricots, white chocolate chips and crunchy pecans.
The Carrot Cake Cookie was created through Levain’s exploration of a breakfast cookie, resulting in a warm-spiced treat with seasonal appeal for the upcoming warmer weather. Bringing the dessert into Levain’s signature format required multiple rounds of testing, from refining the spice balance to figuring out how freshly grated carrots would blend into the dough while maintaining the bakery’s signature texture.
“We had been experimenting with a breakfast-forward cookie for a while, and ended up with carrot cake — and this is when everything finally clicked,” said Pam Weekes, co-founder of Levain Bakery. “It’s a classic for a reason: the kind of flavor people genuinely love. When it came together, it felt like the perfect way to welcome spring. It’s also our first vegetable-forward cookie, and one we really enjoy.”
Levain’s Carrot Cake Cookie is available in all 19 of its bakeries and online for nationwide shipping through June. Also returning this spring is the Lemon Cookie, featuring bright citrus flavor and sweet lemon chips.
Both seasonal flavors can be purchased individually and are featured in the new Spring Garden Party Assortment, a collection including Lemon, Carrot Cake, Oatmeal Raisin and Caramel Coconut Chocolate Chip cookies.
To celebrate Mother’s Day, Levain will also debut a brand-new limited-edition Mother’s Day Cookie Tin, available April 20 to May 11. Sized to hold an 8-pack of cookies, the tin will arrive in bakeries the week of April 15 and be available for purchase nationwide in-store and online.
