Croissants, management define RBA March 2026 education

WESTLAKE, OH — Heading into the close of Q1, the Retail Bakers of America (RBA)’s lineup of education events appeals to a broad scope of baking professionals.

From in-person opportunities to virtual sessions, here’s what lies ahead for learning opportunities in March through RBA.

RONDO Croissant Seminar

March 10-11 | Moonachie, NJ

Hosted in RONDO’s 7,000-square-foot Dough-how Center in Moonachie, this in-person seminar offers attendees a detailed look at all parts of croissant production. The first day focuses on fundamental information, including formulation, mixing, lamination techniques, sheeters and proofing. On day two, bakers will learn about specialty croissant types and receive insights on scaling up for industrial baking.

The cost is $30 and $100 for members and non-members, respectively.

Brewing Up Success: How Bakeries Are Boosting Business with Beverage Programs

March 12 at 4 p.m. ET

Sometimes, it can be about more than the baked goods in the case. In this panel discussion, attendees will learn the role a beverage program can have in supporting a bakery’s revenue. Attendees will hear from Angela Yeo, owner of Cocotte French Bakery in Cornelius, NC; Cara Vasquez, owner of The Flour Shop Bakery in Highland Village, TX; and Shellane Brown, owner of Woodstone Bakery & Cafe in Trilith, GA, about their experiences integrating beverage programs into their operations and what they’ve learned through the process.

Training and Developing Strong Managers in Your Bakery

March 19 at 4 p.m. ET

Building effective leadership is a key factor in a bakery’s success. In this webinar, bakery leaders from across the country will lend their perspectives on how they’ve grown their respective management teams. Bakers will hear from Amy Emberlin, managing partner at Zingerman’s Bakehouse in Ann Arbor, MI; Raul Porto, president and owner of Porto’s Bakery in Southern California; and Stephen Jones, executive pastry chef at Flour Bakery + Cafe in Boston.

Webinars are free for RBA members and $30 for non-members.
