CRANSTON, RI — From a virtual career fair to a discussion of automation in artisan baking, The Bread Bakers Guild of America (BBGA)’s November’s event sessions offer education and insights.

Check out what the association has in store:

Baking Careers Beyond the Bench

Nov. 2 | 5-6:30 p.m. EST

Held in partnership with the Retail Bakers of America, the free virtual event connects bakers with employers from across the retail industry, including ingredient and equipment suppliers, commercial and wholesale bakeries, and other affiliates. They’ll discuss how their careers evolved from behind the bench to sales, R&D, technical services, quality assurance, equipment engineering and more.

Representatives from AB Mauri, Bridor, Central Milling, Lesaffre, Revent and RONDO are expected to attend.

BreadTalks: Breaducation with Andrew Janjigian

Nov. 9 | 5-6 p.m. EST

Andrew Janjigian, head baker at Wordloaf, takes a deep dive into the science and fundamentals behind great bread, from ingredients and dough chemistry to fermentation, time, temperature, and the many variables that shape a finished loaf. Drawing on more than two decades of baking, rigorous testing and lessons learned from other bakers, Andrew explores the processes that lead to better baking.

Artisan and Automation: The Craft and the Machine

Nov. 10 | 9:30 a.m. to 4:30 p.m.

What happens when artisan baking meets automation? Can equipment improve consistency and efficiency without sacrificing the qualities that make artisan bread special?

In this hands-on, full-day session for bakery owners and operators, BBGA explores those questions alongside the Glimek team at Coop Equipment Distributors.

Guildhall Gathering in Evanston, IL

Nov. 10 | 6-8 p.m.

This Guildhall Gathering will be held at Hewn, a women-owned artisan bakery in Evanston, IL. Co-owners Ellen King and Julie Matthei opened Hewn in 2013, and the bakery has since grown to three locations in Evanston, Libertyville, IL, and Winnetka, IL.

Ellen, a classically trained chef and author of Heritage Baking, will lead an exclusive tour of the production facility and offer a taste of some of the bakery’s creations.
