MIAMI — A partnership between Oceania Cruises and The Butter Book is taking bakery education to the high seas.
The luxury cruise line and digital bakery training platform have teamed up to create The Floating Pastry Academy. The three-year training program offers more than 200 of the cruise line’s bakers and pastry chefs with theory and practical training conducted both online and on board.
The concept was created by Chef Eric Barale, executive culinary director of Oceania Cruises, and Chef Sebastien Canonne, founder of The Butter Book.
“This new academy reflects the respect we share for the traditions that shaped us, and for a passion for culinary excellence at sea,” Eric said. “Culinary excellence starts with our people, and this new program will reinforce the consistency, refinement and artistic precision our pâtisserie demands, while nurturing the professional growth of our chefs.”
The program will provide participants with expanded training and elevated serving standards. Additionally, the curriculum will offer long-term learning opportunities for both bakery and pastry roles, foundations for new members, role-based specialization, and an assortment of digital courses, quizzes and hands-on examinations.
