CRANSTON, RI — With the holiday season quickly approaching, customer requests for specialty breads increase. To help retail bakers diversify their menus, The Bread Bakers Guild of America is holding a virtual event featuring Ciril Hitz, who will demonstrate how to make classic Western European breads.
Ciril is a full-time senior instructor at the College of Food Innovation and Technology at Johnson & Wales University and teaches workshops at his private baking facility in Providence, RI.
During the class, Ciril will demonstrate how to make:
- Stollen
- Panettone using commercial yeast
- Gibassier with olive oil, orange blossom water and candied orange peel
By the end of the course, participants will gain an understanding of proper mixing, fermentation and handling techniques for highly enriched doughs, the different outcomes that result from using solid and liquid fats, and best practices for packaging and storing these products for sale.
The virtual class is scheduled for Nov. 7 from 5-7 p.m. via Zoom.
