Artisan Bakery Expo East releases demo schedule

ATLANTIC CITY, NJ — The Artisan Bakery Expo East (ABEE), set for Oct. 1-2 at the Atlantic City Convention Center, has announced the demonstrations for this year’s event.

Throughout the two-day expo, attendees have the opportunity to attend eight different demos.

OCT. 1

How to Make the Perfect Cake Pop Dough for Character Creations | 11:15 a.m. – 12:15 p.m.

Leslie Glass, a cake pop artisan and owner of JustLes Creations, will take attendees through the development of her cake recipe, which provides the base of cake pop dough manipulation. She’ll also cover key topics for cake pop making and demonstrate how to build unique flavors without compromising the structure of the cake pop.

New Trends in Cake Decorating | 12:30 – 1:30 p.m.

Lisa Mansour, an award-winning expert in cake decorating and head of the NY Cake Academy, will highlight trends currently defining cake decoration.

Sweet & Savory Tarts that Sell | 1:45 – 2:45 p.m.

This demo, presented by Charles Niedermyer, baking and confectionary professional and chef instructor at the Pennsylvania College of Technology, focuses on taking both sweet and savory tarts to the next level.

Beyond Hummus: Vegan & Vegetarian Sandwiches that Sell | 3 – 4 p.m.

Solveig Tofte, co-owner and head baker at Sun Street Breads,  will demonstrate accessible, practical elements for vegetarian and vegan sandwiches with unique flavors and textures. The session will focus adding plant-based options to grab-and-go cases.

OCT. 2

Elevated Monkey Breads | 11:15 a.m. – 12:15 p.m.

Solveig Tofte returns to the show flow to highlight new savory flavor options for pull-apart breads that balance flavors and unique combinations of cheese, fruit, herbs and vegetables. She will also teach attendees overlay and stacking techniques to create presentable breads and new ideas for customer events.

European Pastries | 12:30 – 1:30 p.m.

Jörg Amsler, owner of Truly Jörg and master pastry chef, will demonstrate some of his favorite European treats and pastries.

Chocolate 101: Choosing the Right Chocolate for the Right Application | 1:45 – 2:45 p.m.

In this demo, Charles Niedermyer will show attendees how to choose the right chocolate for an assortment of applications.

Rudolph the Red-Nosed Reindeer Character Pop Creation | 3 – 4 p.m.

Leslie Glass will demonstrate the steps for creating Rudolph the Red-Nosed Reindeer cake pops, one of her top requested holiday cake pops. She will break down the components and explain how to mold the dough, melt the chocolate and add the elements to create the character. Additionally, she’ll provide insights on the tools that help her create this classic holiday character.
